Quick answer: You cannot tell pure honey from fake honey by taste, colour, thickness or any home test. The water, thumb, flame, tissue, vinegar and ant tests only show how thick or wet a honey is, and honey mixed with modern sugar syrups passes all of them. Three things actually help: a label that lists only honey, a named flower and region, and an NMR lab report for the batch in your jar. If you remember one thing: ask the brand for the NMR report that matches the batch number on your jar.
Pure, raw, natural, organic: what the words mean

"Pure" and "raw" answer different questions. A jar can be raw and still have syrup in it, or pure and heated. You need both, and you need proof of both.
Why fake honey is common in India
Honey is easy to stretch with cheap sugar syrups made from rice, corn, cane or beet, and some of these syrups are made specifically to pass the routine tests honey is checked with in India. In 2020 the Centre for Science and Environment (CSE) bought 22 samples from 13 brands. Most passed the Indian standard tests, but in NMR tests done abroad, CSE reported that 77% of the samples were adulterated (CSE). NMR testing is still not mandatory for honey sold within India. CSE notes it has been required for honey exports since August 2020.
This is why "it looks fine and tastes fine" is not enough.
How to identify pure honey at home: 8 tests and what each really shows

None of these can detect added syrup. They describe how a honey behaves, and genuine honeys behave very differently from each other. What actually works: a 7-point check before you buy
- Read the ingredients. It should say only "honey". Walk away from "honey blend", "with jaggery", added flavour, or any second ingredient.
- Look for a named flower or bee. Litchi, Jamun, Tulsi, Ajwain, or a bee such as Apis florea (small bee). "Multiflora" is fine if a region is named.
- Look for a named region and season. For example, Litchi from Bihar and West Bengal, Tulsi from Uttar Pradesh and Madhya Pradesh. A brand that knows where its honey comes from will tell you.
- Check the processing. Look for "raw", "unheated" or a stated temperature limit. Shuddhta keeps its honey below 40°C.
- Ask for the batch NMR report. Match the batch number on the report to your jar, and check the lab's name and the test date. A one-time certificate from years ago is not the same thing.
- Check the FSSAI licence number. It's a legal requirement for selling food, but it is not proof of NMR testing.
- Be wary of the price. Raw, single-source honey cannot be sold at the price of sugar syrup. Very cheap "pure honey" is a warning sign. (See honey price per kg in India.)

Signs that don't prove anything
Colour, thickness, crystallisation and label words describe a honey, but none of them proves it is pure:
- Colour. Honey ranges from almost clear (litchi) to nearly black (jamun, forest) depending on the flower. FSSAI itself notes honey's colour varies from light to dark brown.
- Thickness. Changes with flower, moisture and temperature.
- Crystallisation. Natural in raw honey, especially in winter. It doesn't mean the honey is spoilt or fake, and a honey that stays liquid isn't automatically fake either. Why raw honey crystallises.
- "No added sugar". A good sign, but honey itself is mostly natural sugars. What "no added sugar" means.
- Front-label words like natural, premium, traditional or farm fresh. These are marketing, not evidence.
What is NMR testing, and how do you read a report?
NMR (Nuclear Magnetic Resonance) reads the molecular fingerprint of a honey sample and compares it with a database of genuine honeys. It can pick up added syrups, including ones designed to pass older tests, and can show whether the honey matches its claimed floral or regional origin.
No single lab test answers every question, and NMR is strongest as part of a wider picture: lab testing + traceable sourcing + honest labelling. When a brand shares a report, check three things:
- The batch number matches the one printed on your jar.
- The lab is named and independent of the brand.
- The date is recent and fits the harvest.
