Types of Honey in India: By Flower, Bee and Processing
Indian honey can be grouped four ways: by the flower the nectar came from (single-flower honeys like jamun, litchi, mustard and eucalyptus, or multiflora honeys like forest and Himalayan honey), by the bee that made it (five main bees, from the tiny Apis florea to the giant rock bee), by processing (raw or processed) and by form (liquid, crystallised or comb). Most honey in a supermarket is blended multiflora honey from box-kept bees. Specialty honeys name their flower, their bee and their region. Read more...
Raw Honey vs Processed Honey: What's the Difference?
Raw honey is honey that has only been strained to remove wax and debris, then packed without heating, pasteurising or ultra-fine filtering. Processed honey is usually heated and finely filtered so it stays clear and runny on the shelf. Heating and filtering change honey: they remove pollen, reduce natural enzymes and raise a heat marker called HMF. Raw honey crystallises more readily, and that is normal. Neither "raw" nor "processed" tells you whether sugar syrup was added; only lab testing such as NMR can show that. Read more...
Honey vs Jaggery vs Sugar: Which Is Better?
Honey, jaggery (gur) and white sugar are all mostly sugar, so none of them is a health food. Honey is slightly lower in calories per spoon and usually raises blood sugar a little less quickly than white sugar, but the World Health Organization counts honey as a "free sugar" just like table sugar. Jaggery keeps small amounts of minerals that refined sugar loses, but it affects blood sugar much like sugar does. The best choice is the one you use least of. If you have diabetes, ask your doctor before... Read more...

Can You Put Honey in Hot Water or Tea? What Heat Really Does
Yes, you can put honey in hot water or tea, just not boiling. Let the drink cool to lukewarm first (roughly 40°C, comfortable to sip), then stir the honey in. High heat reduces honey's natural enzymes, drives off its aroma and raises a compound called HMF. Read more...
Small Bee Honey vs Stingless Bee (Dammar) Honey: What's the Difference?
Small bee honey and stingless bee honey come from two different kinds of bee. Small bee honey (chhoti makkhi ka shahad) is made by Apis florea, a true honey bee that builds one small open comb on bushes. Stingless bee honey (called dammar or cheruthen honey) is made by tiny stingless bees such as Tetragonula, which live in tree hollows and wall cavities and store honey in small resin pots. Stingless bee honey is usually thinner, more sour and even scarcer. Both are rare, but they are not the same... Read more...
